But, at this point, some relatively large fraction of the population is a "Covid Survivor". I know dozens of them. Even if you count only the people who know they've had Covid, roughly 50% of the people that I know have had it.
I don't know anybody who knows anybody who has "Long Haul Covid".
If it were really true that about 1 in 5 adult Covid survivors had Long Haul Covid, shouldn't I know someone with it? And, failing that, shouldn't I at least know someone who knows someone?
More people in my network have died from Covid than have "Long Haul Covid", and nobody believes that Covid kills even close to 1 in 5 adults who get it.

Just because someone doesn't outright tell you about a very general umbrella of post-acute symptoms doesn't mean it's not happening. Someone with persisting mild diarrhea may not want to bring that up socially.

Where exactly did you see this claim being made? The study is not suggesting Long COVID is killing people at scale, just that 1 in 5 adults are experiencing lingering symptoms that you wouldn't expect recovering from a common cold or flu.
