People absolutely do that. Not people you really want to work for, but OP has no other options. Take the offer, get experience, and look for your payday in a couple years at Job #2.

Yeah, I think my hesitation is present due to this job not being in the “tech” sector. It feels more old school.
I’ve worked in both “tech” and “tech-adjacent” roles over 20+ years. The tech-side of the equation often compensates better, the adjacent roles can have job security like you’d not believe, though it may be a bit boring. YMMV
