The closest to a real and official demake by a company itself is probably ROM City Rampage, a version of Retro City Rampage for the NES. Here's a video going through the process: https://www.youtube.com/watch?v=Hvx4xXhZMrU
As an aside there's something very meditative in Euro Truck Simulator/American Truck Simulator. After a long/tiring day doing a virtual haul for 30-45 minutes is really relaxing and soothing.
April's 1st???
Look good however :)
Even if it April's 1st, they really took the effort to draw all screenshots.
