But I think this simple example suggests conversational forms can be unintuitive for consumers, and it can be more costly for both the asking side and the answering side to communicate the same information.

I think more sites are going this way (bitrise mobile builds is an example; theirs is still clunky but getting there). Have been tinkering with 'json first admin', a toolset for hosting config schemas and providing semi-automatic gui previews (v1) and edit controls (v2).
I wonder how much of nocode will converge to 'declarative config with minimal custom logic', rather than 'gui first / gui only'.
But this is very slick, good work.
