I'd love some stats on people who leave various religions. For example is a person leaving Mormonism more likely to become atheist (like Lane) or more likely to pick up another religion? Is the percentage of ex-mormons who become atheists higher or lower than that of ex-catholics? Are these stats correlated with how fervently they practiced the religion of their childhood?

Lane here. I would love to see this as well. Anecdotally, most the Mormons I know in Utah leave for atheism/agnosticism, especially if they're a millennial like me.

However, the Latinos I know tend to leave for some form of non-denominational Christianity or vague theism. The reasoning I get from my Latin friends is that "it's crazy to not believe in God at all". I'm thinking it has to do with how few atheists there are in their communities.

At least for me, being raised fundamentalist, once some of it was shown to be false it was pretty east to throw it all out. Whereas more moderate religious people maybe easier to adapt to other moderate forms of religion because they didn’t start with the mindset of “this is all provable fact” (therefor all disprovable), they maybe started with more of a “this is a philosophy to help human experience/meaning; we know some but not all”, etc.
