I used to refer to the openNIC project but now it looks like dead. What are the alternatives?

I pay for NextDNS. They've been pretty good in the 1-1.5 years I've been a subscriber.

Aside from resolving they also provide host-based blocking, so it's like a Pihole in the cloud. Especially useful since I've set up specific profiles to block ads and OEM telemetry/spyware and configured my parents' devices to use it as well.

does it block ads in youtube : in app, and in browser ?

Nope, YouTube does not load ads via network/DNS requests. I'm not exactly sure about the mechanism, but no blocker other than uBlock Origin has been able to block YouTube ads that I know of, because they inject some scriptlets at the browser level to deal with it.
