The figures are found by comparing the number of data scientist job listings posted on Australia's main jobs website during the 2020 and 2021 financial years (i.e. July 2019 through June 2021).

I'd guess SAS's increase could be due to companies needing more reporting tools built to understand trends during COVID-19. Tableau's growth perhaps a combination of that, as well as organic rise in popularity for ease of producing slick, informative visualisations. Matlab's rise I cannot explain.
Having used matlab briefly, I am in no better position to explain it either.
