I actually really enjoy this sort of text-based Menu & Query interface, it makes it easy to discover & easy to remember command combinations!

I wish more CLI apps offered this type of interface.

Does anyone know if there's a specific name for this type of interface? (Like fdisk in linux)

I call that a "gnu readline" interface. I suppose you could also call it a "zork" interface, especially if there is a lot of state that can be navigated. Compare with "curses" for an ascii-art gui like alsamixer.
