Ubuntu GNOME would probably work fine, except when it comes to video. People run similar stacks on the Pinebook Pro, which is the same SoC design. Unfortunately using a mainline stack with the rk3399 will still get you CPU en/decoded video, rather than using the dedicated VPU. That seems to be changing soon.
