A few years back, I remember it being as one of the most stable and reliable operating systems that's being used in critical in infrastructure. Yet today, I barely hear anything about it. Is adoption no longer growing due to Linux?

It's still used, but I doubt it's growing anymore. To me it feels like a product that will still be around for a long time, but is falling behind more and more

Why is it falling behind? Is it mainly because of Linux or are there other factors?

It's not evolving much, everyone else is - it gets squeezed from below by other real-time OSes, from above by Linux, hybrid-models of Linux + RT component elsewhere become more and more viable, it falls back in developer/customer experience, ...
