One thing I do, regarding this, is I have a separate checking account just for paying bills... I have the majority of my paycheck deposited there and never touch it. There's enough to cover everything (mostly set to auto-pay) except for the larger expenses (mortgage, car payment) that I always do at the beginning of the month. I don't have those in auto-pay only in case a payroll check is delayed unexpectedly, in order to avoid overdraft on that account.
It actually helps a lot to have that money entirely separated from any day to day or entertainment considerations. Food, gas, lunches, movies, etc come out of another account with a fixed amount per pay check. This way, I decide based on what I have if I can do X. Or if I should take my lunch vs. going out, etc.
