Ask HN: How to learn by conducting interviews

Lately, I have been asked to take a lot of interviews to fill a few senior software engineer position, I myself am one. However, it's quite unproductive listening to others projects story where they can easily take credits without going to many details or having to do a hands-on contribution. How do I learn from taking interviews or help me prepare myself for interviews in other companies?
