Gi-tea or Git-tea seem right, considering the logo is a cup of tea.

It's a pun. It's written in go, and the project is gitea, so go-gitea (go get tea).

Perhaps its like gitty, rhyming with giddy?

Ji-tay-uh

:-}

Maybe like goatee?

As a native German speaker: git is not spoken with English pronunciation, so Gitea, also without English pronunciation.

Downvotes show that this is the right way to pronunce it.
