Ask HN: Legalese for contracting out startup development

I need to contract out development of an iPhone app to a hacker, whom I intend to pay in cash. Is there standard legalese that I should get him to sign so that I am protected from the possibility that he runs off with the app and sells it himself? I know I am being paranoid, but at this point I am clueless.
