So the issue is "sometimes software won't respect your privacy, you will be aware of this and can change it or use something else." That's not an issue.
I'd say Linux(yes, Linux, I'm not talking about Hurd) is more indifferent to privacy than protective of it.
There's a rather surprising and inconvenient route to disable cortana: change the install language. Cortana is primarily available in English.
Just compare their privacy policies. Microsoft's makes basically no exceptions for things that they may do with your data. Apple's still reads like it actually tries to outline a sane piece of software.
By default everything is backed up to iCloud right?
You don't have to enable icloud
You have the option of not logging in to iCloud at all.
You can barely backup an iPhone to the free iCloud option. There is no free Mac backup to iCloud.
Also imagine the bandwidth requirements, for many people such a backup would run forever without completing.
It's not the default, you get a prompt during setup/activation where you choose to enable or disable iCloud.
