Would be an interesting project to follow. An even more interesting journey would be to document the entire process and only use/make open source products as a replacement of each Google product.
The problem is: how do you make an open source version of YouTube, or even replace it with Vimeo? People publish their stuff to YouTube, you can't force them to use Vimeo...
