Please change the title.
Currently it's "I dare you to read this and still feel OK about tipping in the United States." 11/10 on the clickbait scale.
Suggestion from the third (non-quote) paragraph: "Tipping marginalizes those who depend on it." This seems to be the central thesis of the article. Or at a higher level: "Interview with Saru Jayaraman about tipping".
